The good, old farmer's Speck will be served on a Mascarpone-chives bed.. the pork medallion roasted in Thyme, served with mashed potatoes and refined with chive and pumpkin cream. You'll taste herbs and spices in many of our dishes..because they gives this very special flavour. The "Ultner-Bergheu"* for example is used for soups and roasts, fresh basil for mozzarella-cheese etc. hay from Ulten Valley.
